Peanut Butter Protein Muffins

This gluten-free & dairy-free recipe will have you coming back for seconds! This protein packed treat is topped with a peanut butter frosting that is optional but highly recommended. Try this recipe out and tag us on instagram to be featured @xendurance

Ingredients

  • 2 Scoops XND Vanilla Protein Powder

  • 2/3 Cup Coconut Flour

  • 1 Teaspoon Baking Soda

  • Dash of Salt

  • Dash of Nutmeg

  • 2 Whole Eggs

  • 4 Tablespoons Coconut Oil

  • 1/4 Tablespoon Stevia

  • 1/4 Cup Oat Milk

Frosting

  • 4 tablespoons peanut butter

  • 1/4 cup of milk of choice

  • Top with chocolate chips!

Directions

  1. Preheat oven to 350 degrees Fahrenheit

  2. Mix all ingredients together in large bowl.

  3. Scoop into prepared muffin pan and bake at 350 for 15 minutes or until a toothpick comes out clear of batter

  4. Let cool and top with frosting
